
Branching out a bit to share a recipe favorite. Thanksgiving is approaching quickly and so are holiday menus and preparations. For years I have been asked to bring one very special dish to EVERY holiday gathering. I have two nephews who said it’s their number one favorite dish on the menu. Guaranteed it’s not something you would expect. It might be the last thing you would guess. Any guesses?
Yes, the title of this blog gave it away. Spinach. Not just any spinach. The best spinach on the planet. “Aunt Lisa’s Spinach.” If you haven’t tried it, it should be on your bucket list for sure. If you don’t believe me, ask my 11 and 13 year old nephews.
So here you go…Don’t wait until Thanksgiving to give it a try!
Aunt Lisa’s Spinach
4 boxes frozen chopped spinach, thawed
2 8 oz. cream cheese, room temperature
I package of Bacon cooked and crumbled
2 stick butter, melted
2 cups shredded Parmesan cheese (not grated)- save 2 tbsp for topping
Mix all in greased 9×13 casserole dish, sprinkle about 2 tablespoons shredded cheese on top, and bake at 350°F for 30 minutes or until bubbly.
